Do you grind up the meat and then squeeze it through a press to make your jerkey? It looks like that is what you did, but not sure. I'm more of a lazy type and just trim it up, salt and pepper it. I bought my wife an "Excaliber" food dehydrator five or six years ago, and it works great. I can do about 12 to 15 pounds at a time in it and it take about a day and a half to make jerkey. I do marinate the jerkey in a recipe that my wife found somewhere and add just a hint of liquid smoke to it and it usually turns out so well, I have to hide it from my kids or its gone in a day or two.

We also have the Excaliber dehydrater and they are awesome! Love the jerky too and soooooo do the kids!!!

i have the dehydrator,it is a nesco, a jerky works gun with the 2 different nozzles for it, and a cabelas 1hp grinder, i start with the coarse blade, then run it threw again in the medium for jerky, it is chili meat, we just coarse grind it, last year we made brats with the sausage casing, just twisted it about every 8" and put it in the bradley smoker, turned out awsome, 5 lbs of deer, 2 lbs of pork butt, i love deer jerky
